SWEET LAMB FILLET

Lamb fillet with a sweet spicy glaze.

2x Fillets of lean lamb (each225g/8oz)

1x tbsp olive oil

½ onion (finely chopped)

1x clove of garlic (crushed)

1inch piece of ginger (grated)

5x tbsp of apple juice

3x tbsp of apple sauce

1x tbsp light muscovado sugar

1x tbsp tomato ketchup

½ tsp of mild mustard

Pinch of salt & pepper

Green salad leaves

4x slices of crusty bread (with Flora Pro-Active Spread)

COOKING:

  1. Place the lamb fillets on a large of double thickness kitchen foil and then season with salt and pepper.
  2. Heat the oil in a pan and fry the onion & garlic for 2-3mins until softened (but not browned).  Then stir in grated ginger and cook for approx 1min (stir occasionally).
  3. Stir the apple sauce, juice, sugar, ketchup and mustard and bring to the boil.  Boil for about 10mins and stir the mixture occasionally so it does not burn to the base of the pan.
  4. Brush half the sauce over the lamb fillets and wrap up the lamb in baking foil.  With grill on high heat, place the lamb fillets on the grill for approx 8mins, turn and cook for a further 7mins.
  5. Take fillets from grill and open the baking foil and brush some more of the sauce over fillets.  Then continue to grill for a further 15-20mins (or until your preference)
  6. again take fillets from grill and place on a chopping board, remove foil and cut into thick slices.  Place the sliced lamb fillets onto serving plate and pour remaining sauce.  Serve with green salad and slice of crusty bread.
