Honey & Orange Chicken with Chilli Vegetable Salad

For the Chicken For the Chilli Vegetable Salad
4x 110g chicken thigh fillets, skinned

2x tsp curry powder

1x tsp corn flour

125ml orange juice

1x tbsp lemon juice

1x tbsp honey

2x tbsp mustard

Pinch of salt & pepper

200g broccoli

100g cauliflower

100g carrots

2x tbsp mild chilli sauce

1x tbsp soy sauce

2x tsp lime juice

1x tbsp chopped fresh coriander

Freshly ground pepper

Pre-Heat the oven to 180C/Gas 5

Place the chicken fillets into a plastic bag with the curry powder, corn flour and pinch of salt & pepper.  Seal bag and shake till the chicken fillets are evenly coated with the curry powder mix.

Using a jug mix together with orange & lemon juices, honey & mustard along with a pinch of salt & pepper.

Remove chicken from bag, place in a shallow ovenproof dish and pour the orange and honey mix over the top.  Turn the chicken pieces to coat thoroughly, then place in oven for 45mins.  Turn and baste half way through cooking.

Meanwhile, steam the broccoli, cauliflower and carrots until tender.  Combine the veg with the chilli sauce, lime juice and coriander, adding black pepper for taste and then toss.

Finally serve with the glazed chicken.
