Vegetable Bake

What could be more simple than slicing up some potatoes and throwing in some beans…

 

  • 1tbsp of virgin olive oil
  • 1tsp of paprika
  • 2x large red onions
  • 2x crushed garlic cloves
  • 400g of cannellini beans (drained and rinsed)
  • 2x large baked potatoes
  • 1x large courgette
  • 4x tomatoes
  • 2tbsp of tomato puree
  • 150ml of vegetable stock
  • 25g of parmesan

Cooking:

  • Pre-heat the oven to 220C
  • gently fry the onion and garlic for 10mins
  • Add the paprika, tomato paprika and beans – then place in ovenproof dish
  • Boil the potatoes for 5mins, drain and spread over the beans.  Top with courgettes and tomatoes.
  • Pour the stock over the potatoes and bake for 35mins and finally spinkle parmasan and cook for further 10mins, until golden.

This will serve 4 people
