Vegetable & Grilled Tuna Kebabs

Vegetable & Grilled Tuna Kebabs

PREP TIME: 5mins.         COOKING TIME: 15mins.

 

INGREDIENTS:

4x Tuna Steaks (approx 150g each)

2x Red onions

12x Cherry tomatoes

1x Red pepper

1x Yellow pepper

1tbsp of Olive oil

Freshly ground black pepper

Lemon & lime wedges to garnish

If you like you can also add such ingredients as courgettes.

 

COOKING:

1: Pre-Heat grill on high.  Then cut tuna into chunks, then peel and quarter the red onions.

2: Using 8 skewers (if using wooden skewers, soak the most), place the tuna chunks, pepper, onions etc onto the skewers separated evenly so you get tuna, yellow pepper, red pepper, cherry tomato, red onion etc…  Giving a good selection on each skewer.

3: Mix the oregano and olive oil together in a bowl and season.  Lightly brush the kebabs with the oil mix and grill for 10-15mins or until evenly cooked.

4: To finish with, garnish with the lemon and lime and serve with green or mixed salad.
